I have been so enamored of Salli Swindell and Nate Padavick's site: www.theydrawandcook.com. Many of my friends have contributed their delicious recipes and wonderful artwork to the site and I thought I'd send in my contribution for Salmon Rillettes. I recently made them for Easter and it was a hit..I suppose it's because my family enjoys smoked salmon and crunchy olive-oil toasted baguette rounds. I was happily surprised to see my two finicky nephews going back for more. : ) So, if you get a chance, and you like salmon, perhaps try the recipe I followed from the Gourmet website, here. And don't forget to visit Salli and Nate's site as well! : )
